Gluten Free Chocolate Cake for One

Sometimes when I need a quick snack and I’m the only one at home, I whip up this gluten free, single serving cake. It’s not quite a substitute for regular cake. But, it is gluten free and it is a tasty, especially if you are generous when sprinkling the chocolate chips on the top. It uses almond flour and cooks in the microwave in just a touch over a minute, depending on how heavy the bowl is. Just mix and cook in the same single serving bowl. Be careful not to over cook as it gets tough if microwaved for too long. If you’d like to give it a try, please feel free to save the recipe card below.

Gluten Free Chocolate Cake for One:

1/4 to 1/3 cup almond flour
1/4 teaspoon baking soda
pinch of salt
1 teaspoon cocoa powder
1 teaspoon olive oil or butter
1 teaspoon honey
1 egg
Chocolate chips
Walnuts

Mix dry ingredients in a microwavable bowl.
Add oil, honey and egg. Mix until smooth.
Sprinkle with chocolate chips and walnuts.
Microwave for 1:00 to 1:15 minutes. Eat while hot.
