Sometimes when I need a quick snack and I’m the only one at home, I whip up this gluten free, single serving cake. It’s not quite a substitute for regular cake. But, it is gluten free and it is a tasty, especially if you are generous when sprinkling the chocolate chips on the top. It uses almond flour and cooks in the microwave in just a touch over a minute, depending on how heavy the bowl is. Just mix and cook in the same single serving bowl. Gluten Free Chocolate Cake for One:
1/4 to 1/3 cup almond flour
1/4 teaspoon baking soda
pinch of salt
1 teaspoon cocoa powder
1 teaspoon olive oil or butter
1 teaspoon honey
1 egg
Chocolate chips
Walnuts
Mix dry ingredients in a microwavable bowl.
Add oil, honey and egg. Mix until smooth.
Sprinkle with chocolate chips and walnuts.
Microwave for 1:00 to 1:15 minutes. Eat while hot.
